Apple Streusel Muffins (Tdn) Recipe
- 4 Tbsp. Finely minced pecans
- 1/4 c. Brown sugar
- 1/4 c. All-purpose flour
- 1/4 tsp Mace
- 2 Tbsp. Chilled butter
- 1 3/4 c. All-purpose flour
- 3/4 tsp Salt
- 1/4 c. Sugar
- 2 tsp Baking pwdr
- 1/2 tsp Cinnamon
- 2 x Large eggs
- 3/4 c. Lowfat milk
- 4 Tbsp. Melted butter
- 1/2 c. Minced apple
- Grease 12-muffin c. or possibly line with paper.
- For topping, combine all ingredients and rub together with fingertips till completely blended.
- Set aside.
- For muffin mix, combine dry ingredients in a bowl or possibly on wax paper and stir to combine.
- Beat Large eggs in a medium bowl.
- Beat in lowfat milk and butter.
- Add in dry ingredients and give 10 or possibly so vigorous strokes.
- Add in apple pcs and stir a few more times.
- Put a spoonful of batter into each muffin c., divide half the topping among the muffins, spoon on remaining batter, then sprinkle with remaining topping.
- Bake at 400 degrees for 25 min or possibly till lightly browned.
