Apple Poppy Seed Muffins Recipe
- 1 1/2 c. All purpose flour
- 1 c. Whole wheat flour
- 1/2 c. Brown sugar, packed
- 4 tsp Baking pwdr
- 1 tsp Salt
- 1 1/2 tsp Grnd cinnamon (I like cinnamon so I used 2 tsp.) (up to 2)
- 1 Tbsp. Poppy seeds
- 2 x Large eggs (or possibly egg substitute equivilant)
- 1 1/2 c. Applesauce
- 1 tsp Vanilla extract
- 1/4 c. Oil
- Combine applesauce, Large eggs, oil, and vanilla in small bowl; mix well.
- In a seperate bowl mix flours, brown sugar, baking pwdr, salt, cinnamon and poppy seeds.
- Add in wet ingredients to dry ones; stirring till just moistened.
- Spoon batter into greased muffin tins, filling 2/3 full.
- Bake at 400 F for 12-15 min.
