Potato Croquette

  1. this recipie was adapted from 'The Vegetable Book' c 1928, by Women's World Magazine
  2. beat potatoes, egg yolk, and butter until fluffy
  3. add salt, pepper, parsley, and onion.
  4. mix well
  5. mold into patties
  6. dip each patty in beaten egg, then in bread crumbs.
  7. Repeat once more.
  8. fry in oil until golden on each side.
  9. drain on paper towels.
