Pineapple Chicken
- 3 Tablespoons Vegetable Oil
- 1/2 cups Onion, Diced
- 1 clove Garlic, Minced
- 2 Tablespoons Fresh Ginger Chopped
- 1 whole Celery Stalk, Minced
- 1 whole Large Carrot, Chopped
- 4 whole Cooked Chicken Breasts
- 8 ounces, weight Crushed Pineapple In Juice
- 1 cup Frozen Sugar Snap Peas
- 1/2 cups Soy Sauce
- 3 Tablespoons Honey
- 1 Tablespoon Chili Powder
- Salt And Pepper
- Heat oil in a large nonstick skillet over medium heat.
- Add the onion, garlic, ginger, celery, and carrot; stir.
- Let cook for 10 minutes.
- Add cooked chicken and combine.
- Add the crushed pineapple to the chicken mixture.
- Add sugar snap peas.
- Then add soy sauce, honey, chili powder, salt and pepper.
- Stir and let cook for 5-7 minutes.
- Serve over rice.
