Bacon Avocado Grilled Cheese Sandwiches
- 18 slices Bread, White Or Wheat
- 1/4 cups Butter, Softened
- 6 slices American Cheese
- 6 slices Provolone Or Swiss Cheese
- 2 whole Avocados, Peeled, Cored, And Thinly Sliced
- 2 teaspoons Lemon Juice
- 2 teaspoons Salt
- 1 teaspoon Fresh Ground Pepper
- 2 teaspoons Granulated Garlic
- 6 Tablespoons Mayonnaise
- 1 pound Bacon, Sliced In Half, Cooked And Drained
- 1- 1/2 cup Shredded Lettuce
- Preheat a griddle or non-stick skillet.
- Butter 12 slices of bread on one side.
- Place 6 slices of bread, butter side down, on the griddle; top with one slice each of American and provolone cheese.
- Top with the other 6 buttered slices of bread (butter side out).
- Meanwhile, lightly toast 6 other slices in the toaster.
- Flip grilled cheese sandwiches when they are lightly browned and allow to cook on the other side.
- Remove from the griddle when lightly browned and cheese is melted.
- Sprinkle avocado slices with lemon juice, salt, pepper and garlic.
- Sandwich assembly: Spread the outside of grilled cheese on one side with mayo.
- Layer cooked bacon slices, sliced avocado, lettuce and a slice of toast that has been spread with mayo.
- Cut in half diagonally and serve.
