Queso Guisado
- 3 Tbsp. vegetable oil
- 1/2 medium onion, chopped
- 1/2 tomato, chopped
- Hot peppers, chopped and seeded, to taste (optional)
- 6 oz. VELVEETA, cut up
- 3 to 4 eggs
- Heat oil in skillet over medium heat.
- Add onion, tomato and peppers; saute until tender.
- Add VELVEETA and stir until melted.
- Beat eggs slightly and add to skillet mixture, stirring until egg reaches scrambled consistency.
- Serve with refried beans and hot tortillas.
- Makes 2 to 4 servings.
