Queso Guisado

  1. Heat oil in skillet over medium heat.
  2. Add onion, tomato and peppers; saute until tender.
  3. Add VELVEETA and stir until melted.
  4. Beat eggs slightly and add to skillet mixture, stirring until egg reaches scrambled consistency.
  5. Serve with refried beans and hot tortillas.
  6. Makes 2 to 4 servings.
