Spiced Pomegranate Royales

  1. Bring pomegranate juice, cinnamon stick, and candied ginger to a boil in small saucepan.
  2. Reduce heat to medium-low, and simmer 20 minutes, or until reduced to 1 cup.
  3. Strain liquid, and discard cinnamon stick and ginger.
  4. Cool, then chill.
  5. Pour 1/2 cup pomegranate mixture in each of two champagne glasses.
  6. Top off each glass with 1/2 cup sparkling wine, and garnish each with 1 Tbs.
  7. pomegranate seeds.
