Raviolicious Stuffed Cookies
- 1 egg
- 200 grams all-purpose flour
- 90 grams unsalted butter
- 50 grams sugar
- 20 grams unsweetened cocoa powder
- 1 tsp baking powder
- 1 pinch salt
- 1 vanilla extract
- 1 cup caramel
- Mix together: flour, sugar, cocoa powder, salt and baking powder
- Add softened butter and the egg
- Knead with your hands until smooth
- Let the dough rest in the fridge for 30 minutes
- Roll the dough out thin and cut it into small discs
- Put half spoonful of caramel in the centre of a disc, then close it with another one and press on the edges to bind the two discs together
- Use a ravioli stamp to cut each caramel filled circle
- Bake at 180C for 8 minutes
