Hibiscus Cooler
- 2 cups sugar-free ginger ale
- 1 cup hibiscus tea (prepared and cooled ~ such as Red Zinger)
- 12 cup rum (optional ~ or substitute vodka)
- 12 peach (very ripe ~ sliced)
- fresh mint sprig (optional ~ for garnish)
- In a large pitcher, combine the ginger ale, cooled tea, peach slices, and rum or vodka (if using).
- Serve over ice.
- Garnish each glass with a mint sprig.
- NOTE: The cooler can be prepared (without the ginger ale) and refrigerated up to 6 hours in advance.
- Add the ginger ale just before serving.
