Quick Spring Pizza
- 2 each flour tortillas (8 inch) prefer whole wheat
- 4 tablespoons tomato sauce store-bought or homemade
- 2 ounces mozzarella cheese shredded and divided about 1/2 cup
- 1/2 each green bell peppers sliced
- 1/2 cup broccoli florets
- 1/4 each red onion sliced
- 2 each mushrooms sliced
- 1 small sweet red bell peppers, roasted sliced
- 1/4 cup artichoke hearts marinated and drained, sliced
- Preheat oven to 425 degree F.
- Place the tortillas on a baking sheet.
- Put two tablespoons of tomato sauce on each of the tortilla, and spread sauce evenly.
- Sprinkle 1 tablespoon of the cheese on each tortilla over the tomato sauce.
- Randomly place all the sliced vegetables to cover up the tortilla.
- Sprinkle the remaining cheese over the vegetables on each pizza.
- If you are using unsalted tomato sauce, sprinkle some salt over.
- Bake for 10 to 12 minutes until cheese is melted, and the edges of the vegetables start to turn into brown.
- Transfer onto the plate, slice and serve warm.
