Bacon and cheese meatballs
- 500 grams mince
- 1 slice bread (or more to make more / bigger meatballs)
- 1 milk (to cover bread with)
- 1 tsp salt
- 1 tsp parsley
- 1 cup cheese (any kind you like)
- 250 grams streaky bacon
- 8 toothpicks
- 1 oil (for frying)
- Preheat the oven to 180C.
- Break the bread in big-ish pieces into a bowl.
- Cover with enough milk so the bread soaks up all the milk.
- Place the mince in a seperate bowl and add the salt, parsley and cheese.
- Mix well.
- Mash the bread with a fork to incorporate all the milk.
- Add the bread mixture to the mince mixture and mix well.
- Roll the mixture into balls and cover with bacon, secure with a toothpick.
- Pour oil into an oven save dish and place the meatballs evenly in the dish.
- Bake in the oven for 20 - 30 minutes or until the bacon is crispy.
- (You can fry them on the stove top as well but I find that they break easily.)
