Five-Flavor Fish

  1. Preheat the oven to 425F.
  2. Heavily spray a 13 x 9 x 2-inch glass baking dish with olive oil spray.
  3. In a small bowl, stir together the remaining ingredients except the fish.
  4. Sprinkle on both sides of the fish, pressing gently so the mixture adheres.
  5. Put the fish in a single layer in the baking dish.
  6. Bake for 10 to 12 minutes, or until the fish flakes easily when tested with a fork.
  7. Orange roughy is usually frozen, then sent to the grocery store and thawed.
  8. If you refreeze and rethaw it, the texture will be harmed.
