Chipotle Lime Chicken Breast Sandwich
- 2 Tablespoons Olive Oil
- 1 Tablespoon Honey
- 1 whole Lime, Juiced
- 1/2 teaspoons Chipotle Chile Powder
- 1/2 teaspoons Cumin
- 1 pinch Kosher Salt
- 2 whole Chicken Breast Halves
- Cheese (such As Chihuahua), For Topping
- 1/2 whole Avocado
- Salt And Pepper
- 2 whole Buns
- Mayonnaise, To Serve
- Tomato And Onion, To Serve
- Whisk together the oil, honey, lime, chile powder, cumin, and salt to make the marinade.
- Add the chicken and marinate in a bag or container.
- Refrigerate for 2-4 hours.
- Grill over medium heat, until juice is clear and meat is no longer pink inside.
- Remove from heat and top the chicken with cheese such as Chihuahua.
- Mash the avocado with salt and pepper, spread it on one side of bun; spread mayo on the other side.
- Add tomato and onion.
- Enjoy.
