Hazelnut Espresso Cookies

  1. Preheat oven to 325F Place racks in center of oven.
  2. Line baking sheets with parchment paper.
  3. Place sugar, salt, espresso powder and nuts in food processor and process until fine.
  4. Transfer mixture to mixing bowl.
  5. In another bowl beat egg whites until stiff.
  6. Fold nut mixture gently into egg whites.
  7. Add vanilla and orange zest and mix until blended.
  8. Spoon batter onto cookie sheets but don't crowd.
  9. Place in oven and bake for 25 minutes or until golden on top.
