Pumpkin Muffins with Apples and Walnuts
- 1-3/4 cups flour
- 3/4 cup sugar
- 2 tsp. pumpkin pie spice
- 1 tsp. Magic Baking Powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 2 eggs
- 1 cup canned pumpkin
- 1/2 cup Miracle Whip Original Spread Family Dollar $3.50 thru 02/07
- 1/3 cup oil
- 1 tsp. vanilla
- 1 apple, cored, cut into 1/4-inch pieces Safeway 1 lb For $0.99 thru 02/09
- 1/4 cup chopped walnuts, toasted
- Heat oven to 375 degrees F.
- Combine first 6 ingredients in large bowl.
- Whisk together eggs, pumpkin, Miracle Whip, oil and vanilla in separate bowl until blended.
- Add to flour mixture apples and walnuts; stir just until moistened (batter will be lumpy).
- Spoon batter into 12 muffin pan cups lined with muffin liners.
- Bake 22 to 25 min.
- or until toothpick inserted in centres comes out clean.
- Cool in pan 5 min; remove from pan to serve.
