Mixed Green Salad with Mango, Jicama and Cashews

  1. Combine 1/2 cup mango with next 6 ingredients in blender.
  2. Puree until smooth.
  3. Season dressing with salt and pepper.
  4. Transfer to small bowl.
  5. (Can be made 3 hours ahead.
  6. Cover; let stand at room temperature.)
  7. Combine lettuces, jicama and remaining 1 cup mango in large bowl.
  8. Toss with enough dressing to coat.
  9. Sprinkle with cashews.
  10. Serve, passing any remaining dressing separately.
