Couscous with Dried Apricots and Pistachios

  1. Combine water, oil and salt in medium saucepan; bring to boil.
  2. Combine couscous, apricots and spices in large bowl.
  3. Add boiling liquid.
  4. Cover immediately; let stand until water is absorbed, about 5 minutes.
  5. Uncover; fluff with fork.
  6. Cool.
  7. (Can be made 6 hours ahead.
  8. Cover; chill.
  9. Bring to room temperature before continuing.)
  10. Mix nuts, green onions and basil into couscous.
  11. Season with salt and pepper.
