Very Lemon Chicken Recipe

  1. Place lemon juice and chicken in a small Teflon skillet with tight fitting lid.
  2. Be sure juice is under chicken.
  3. Baste top.
  4. Poach gently on medium low heat.
  5. Turn after 7 to 10 min and add in mushrooms, if you like.
  6. Poach till done (additional 7 to 10 min).
  7. Don't overcook!
  8. Don't burn!
  9. NOTE: The mushrooms will also be very lemon tasting.
  10. Sprinkle with fresh tarragon.
  11. Add in salt and pepper to taste.
  12. Serves 2.
