Great Eggplant Dip

  1. Place whole eggplant on oven tray.
  2. Bake in a hot oven for one hour or till soft.
  3. Remove from oven, cool slightly.
  4. Peel eggplant, chop flesh roughly.
  5. Combine flesh with remaining ingredients in food processor.
  6. Process till smooth.
  7. Refrigerate mixture overnight.
