Baked Sole With Mushroom Sauce
- vegetable cooking spray
- 2 tsp. reduced calorie margarine
- 3/4 c. minced onion
- 1 Tbsp. all-purpose flour
- 1 lb. sliced fresh mushrooms
- 2 Tbsp. water
- 3 Tbsp. Chablis or other dry white wine, divided
- 1/4 c. thinly sliced green onions
- 6 (4 oz.) sole fillets
- 1/8 tsp. pepper
- Coat a large nonstick skillet with cooking spray; add margarine.
- Place over medium-high heat until margarine melts. Add onion; saute until tender.
- Add flour; cook 1 minute, stirring constantly.
- Add mushrooms, water and 1 tablespoon wine.
- Cook over medium heat 5 to 7 minutes or until mushrooms are tender, stirring constantly and adding 1 tablespoon water, if necessary, to prevent sticking.
- Stir in green onions.
- Remove from heat; cover and set aside.
