Sizzling Shrimp With Corn Relish
- 1 lime
- 1 tablespoon canola oil
- 12 cup shallot, chopped
- 1 tablespoon garlic, minced
- 1 tablespoon jalapeno, minced
- 1 12 lbs shrimp, peeled deveined
- 1 12 cups corn kernels, frozen
- 14 cup cilantro, dried
- Heat a 14 inch wok over high heat.
- Add oil to wok, swirling to coat.
- Add shallots, garlic and jalapeno to wok; stir-fry 30 seconds or just until shallots begin to brown.
- Add shrimp to wok; stir fry 3 minutes or until shrimp are done.
- Add corn; stir fry until corn is heated.
- Stir in juice from lime and cilantro.
- Yield: 4 servings.
- Serving size 1 cup.
