Loqmat al Qadi (Loukoumades)

  1. mix in yeast, lukewarm water, and sugar.
  2. leave to prove for 10 minutes.
  3. slowly mix the yeast into flour.
  4. add 2 tablespoons of water into the mix.
  5. when the mixture reaches a dough-like consistency, cover bowl and leave for an hour.
  6. While waiting, make the syrup.
  7. In a separate saucepan, add water, sugar, and honey, and lime juice.
  8. Mix for 10 minutes until sauce thickens.
  9. Take off heat and leave to cool off.
  10. When dough is just about ready, prepare heating up the frying oil.
  11. Pour so it is about 1 1/2 inch deep of oil.
  12. When oil is ready, use a spoon to fry one inch pieces of dough.
  13. Turn from time to time.
  14. when dough becomes golden brown in color, remove with a sieve and put it into cooled syrup.
  15. Mix in syrup until covered.
  16. remove and place in collinder to allow extra drainage.
  17. when all pieces are fried and dunked in syrup, sprinkle powdered sugar and a pinch of cinnamon.
  18. serve
