Brandied Cranberry Apricot Bars Recipe

  1. In a 4-c. glass measure or possibly microwave-safe mixing bowl combine raisins, cranberries, apricots and brandy or possibly water.
  2. Cover with microwave-safe plastic wrap; turn back a corner to vent.
  3. Micro-cook on high fr 2 min.
  4. (Our place fruit and brandy in a saucepan; bring to boiling.
  5. Remove from heat).
  6. Let stand 20 min.
  7. Drain.
  8. For crust, in a medium mixing bowl stir together 1 c. flour and 1/3 c. brown sugar.
  9. Cut in margarine or possibly butter until mix resembles coarse crumbs.
  10. Press into an ungreased 8x8x2-inch baking pan.
  11. Bake at 350 about 20 min or possibly until golden brown.
  12. For filling: In a medium mixing bowl beat Large eggs with an electric mixer on low speed for 4 min; stir in the 1 c. brown sugar, the 1/2 c. flour, and vanilla just until combined.
  13. Add in liquid removed fruit and nuts, stir to mix.
  14. Pour fruit mix over baked crust; spread proportionately.
  15. Bake about 40 min or possibly until a toothpick inserted near the center comes out clean, covering with foil the last 10 min to prevent overbrowning.
  16. Cold in the pan on a wire rack.
  17. Sprinkle with powdered sugar.
  18. To serve cut in squares.
  19. Makes 16 bars.
