Garlicky Mediteranean Tuna Pasta
- 1/2 bags Brown Rice Pasta Fusilli Or Penne
- 1 can Good Quality Tuna
- 1 jar Roasted Bell Peppers, Sliced
- 13 cups Extra Virgin Olive Oil
- 1/4 cups Kalamata Olives, Pitted And Sliced
- 2 sprigs Green Onion, Sliced
- 1 clove Garlic, Minced
- 1 bunch Fresh Spinach
- 1 Tablespoon Balsamic Vinegar
- 2 teaspoons Salt
- 1 teaspoon Red Pepper Flakes
- 1/4 cups Crumbled Feta (optional)
- Boil water for the pasta and add the 2 teaspoons of salt to it.
- Add the pasta once it comes to a boil.
- In a large bowl, flake the canned tuna and add the remaining ingredients, except for the feta cheese, if using.
- Toss together.
- When pasta is cooked, add a tablespoon or two of the pasta water to the bowl of tuna.
- Drain the pasta and add it to the bowl as well.
- Toss together and adjust seasoning to taste; it may need more olive oil or if you like the spice, more red pepper flakes.
- Top with the feta if using, and enjoy!
