Grilled Chicken and Cheese Sandwiches
- 2 cups chopped cooked chicken
- 13 cup raisins
- 14 cup almonds, toasted
- 14 cup diced celery
- 12 cup mayonnaise
- 12 slices monterey jack cheese
- 12 slices whole wheat bread
- 14 cup butter or 14 cup margarine, softened
- For the chicken mixture, stir the first five ingredients together.
- using half the bread place 1 slice of cheese on each slice of bread (six slices); spread the chicken mixture on evenly and top with cheese.
- spread butter on one side of each of the sandwiches, cook with butter side down on medium heat for about three minutes or until light and brown.
- spread the other side with remaining butter and cook for three minutes.
