Electric Lemonade

• 1 1/2 cups of sugar
• 1 cup of water
• 1/4 cup of lemon peels, about 1.5 lemons
• 1 1/2 cups of lemon juice
• 2 to 3 cups of club soda, chilled

1. Pick two lemons that you will peel zest from.
2. Scrub them well under running water to remove pesticides and any particulate matter.
3. Using a vegetable peeler, peel wide strips of 1.5 lemons and set aside.
4. In a small saucepan, heat the sugar and water over medium until the sugar is dissolved.
5. Stir in the lemon peel and let come to a low boil.
6. Reduce heat and simmer uncovered for about 5 minutes.
7. Let cool.
8. Strain out the lemon peel and transfer to a pitcher.
9. Stir in the lemon juice and chill in the refrigerator.
10. Stir in club soda and serve over ice.
