Electric Lemonade
- 1 1/2 cups of sugar
- 1 cup of water
- 1/4 cup of lemon peels, about 1.5 lemons
- 1 1/2 cups of lemon juice
- 2 to 3 cups of club soda, chilled
- Pick two lemons that you will peel zest from.
- Scrub them well under running water to remove pesticides and any particulate matter.
- Using a vegetable peeler, peel wide strips of 1.5 lemons and set aside.
- In a small saucepan, heat the sugar and water over medium until the sugar is dissolved.
- Stir in the lemon peel and let come to a low boil.
- Reduce heat and simmer uncovered for about 5 minutes.
- Let cool.
- Strain out the lemon peel and transfer to a pitcher.
- Stir in the lemon juice and chill in the refrigerator.
- Stir in club soda and serve over ice.
