Pesto with a Southern Bite
- 1 1/2 to 2 cups basil leaves
- 1 1/2 to 2 cups collard greens
- 3 cloves garlic
- 2 ounces parsley
- 3/4 cup olive oil
- 1 cup grated Italian cheese
- Salt and pepper to taste
- In a food processor, chop first four ingredients.
- To this mixture, add olive oil, cheese, salt and pepper.
- Mix and serve.
