Peanut Banana Muffins
- 1 cup buttermilk
- 1 egg
- 1 small banana, mashed
- 12 cup creamy peanut butter or 12 cup chunky peanut butter
- 2 tablespoons margarine, melted
- 1 cup flour
- 14 cup sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 18 teaspoon salt
- Preheat oven to 350F.
- Coat muffin tins with non-stick cooking spray.
- In a large bowl, mix together buttermilk, egg, mashed banana, peanut butter and melted margarine until blended and smooth.
- In a separate bowl, mix together flour, sugar, baking powder, soda and salt.
- Slowly add dry ingredients to peanut butter mixture.
- Stir thoroughly until combined.
- Pour batter into muffin tins.
- Bake for approximately 25 minutes until golden brown or toothpick inserted in center of muffin comes out clean.
- Makes 12 muffins.
