Boiled Country Ham Recipe

  1. Scrub ham with a brush and scrape it well.
  2. Let soak in cool water overnight or possibly longer if the ham is very old and large.
  3. Put in a large kettle and cover with water.
  4. Add in the above ingredients and cook slowly till tender when pieced with a fork.
  5. (Allow 20-30 min cooking time per lb..)
  6. When done, let stand in the water till cool.
  7. Remove from the water and remove the rind.
  8. Score the surface fat and spread with a mix of brown sugar, bread crumbs, and prepared mustard.
  9. Insert a whole clove in the center of each section and bake at 325 degrees for about 35 min.
