Belgium waffles w/fresh apple compote
- 4 medium apples
- 1/2 cup brown sugar
- 1 tsp vanilla extract
- 4 tbsp butter or margarine
- 1/2 tsp ground cinnamon
- 2 eggs
- 1 2/3 cup milk
- 1/3 cup vegetable oil
- 2 cup all-purpose flour
- 1 tbsp baking powder
- 3 tbsp sugar
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1 whip cream (optional)
- 1 powdered sugar (optional)
- First 5 ingredients are for apple compote.
- Remaining ingredients for waffle.
- Melt butter in pan
- While butter is melting in pan peel, cut and core apples then place in butter
- Add Brown sugar, cinnamon and vanilla to apples and butter.
- Cook for 8 to 10 minutes until apples are tender
- Mix together dry ingredients for batter prep.
- In a separate bowl mix together wet ingredients
- Gently combine wet ingredients into flour mixture.
- Spray waffle iron with cooking spray and pour on batter.
- Cook until Brown about 2 to 4 minutes each.
- Finally put a scoop of apple compote on top of waffle and sprinkle with powdered sugar.
- If desired serve with whip cream.
