So Chewy Oat Squares
- 2 cups oats
- 2 cups nonfat milk (I prefer soymilk)
- 2 eggs (or 4 egg whites, or egg replacer equaling 2 eggs)
- 1 teaspoon baking powder
- 18 teaspoon nutmeg (optional)
- 14 teaspoon cinnamon (optional)
- 14 teaspoon salt
- 2 tablespoons honey (or 1 tbsp honey with 1 tbsp. sugar free maple syrup)
- 12 cup dried cranberries
- 12 cup dried cherries (optional)
- Preheat oven to 375 degrees Fahrenheit (190 Celsius) and gently cover an 8x8 baking pan or dish with light cooking spray.
- Combine all ingredients well in a mixing bowl, adding oats first, then eggs, spices, milk, honey/maple syrup and finally the add-ins.
- Press mixture into the pan and bake for 30 minutes, or until oatmeal is golden brown.
- (you can also add in 1/2 cup chopped nuts or 1/4 cup chocolate chips if desired).
