Bobotie

  1. Preheat oven to 350 degrees F.
  2. Heat oil in a pan over medium heat.
  3. Stir in onions and all the dry spices and cook until onions are transparent.
  4. Add the beef and cook until lightly browned and crumbly.
  5. Soak the bread in half the milk, squeeze out excess milk and mash bread with a fork.
  6. Keep the milk!
  7. Pour it straight back into the remaining milk and set aside.
  8. Add the mashed up bread to the meat mixture.
  9. Now add the sugar, salt, pepper, vinegar, raisins and chutney to the beef mixture and mix to combine.
  10. Spoon the mixture into a greased baking dish and place bay leaves on top.
  11. Bake for about 40-50 minutes in the preheated oven.
  12. Beat egg with all the remaining milk and pour over the mixture approximately 25-30 minutes before end of baking time.
