Nutty and Wheaty Banana Bread
- 3 large bananas, ripe and smashed
- 1 cup brown sugar
- 12 cup Smart Balance omega cooking oil
- 1 egg white
- 1 egg yolk
- 1 14 cups wheat flour
- 1 14 cups flour
- 12 cup oatmeal
- 1 cup dark chocolate chips
- 1 cup walnuts
- Preheat oven to 350 degrees, grease 2 9x5 inch loaf pans.
- Combine all ingredients in a large mixing bowl.
- (1/2 cup chips and 1/2 cup nuts) Mixing with wooden spoon until just combined, its ok if they're clumps in mix.
- Pour evenly into the 2 pans.
- Top each batter with 1/4 cup of nuts and 1/4 cup chips.
- Bake 50-60 minutes, until crumb has cracked and tooth pick comes out clean.
- Let cool 10 minutes in pan and then remove loaf from pan to cool completely.
- Bread can be frozen for up to 6 months.
