Blue Ribbon Chicken Recipe
- 4 boneless, skinless chicken breast halves (about 4 ounce.)
- 2 (1 ounce.) slices cooked ham
- 2 slices Jarlsburg, Muenster or possibly other cheese (about 1 ounce.)
- 2 tbsp. seasoned bread crumbs
- 1/8 teaspoon paprika
- 2 teaspoon butter, melted

- To create a packet, cut each chicken breast half horizontally, almost but not all the way through, cut each ham and cheese slice lengthwise in half.
- Place slice of ham and cheese in each packet.

- Combine bread crumbs and paprika.
- Brush chicken with melted butter, then coat with crumbs.
- In 12 x 8 inch baking dish, arrange chicken with meater portions towards edges of dish.
- Cook covered with wax paper on high 7-9 min till juice runs clear, when chicken is tested with a knife; rotate dish halfway through cooking.
- Microwaves vary - may need more cooking.
- Each serving 230 calories, 9 g fat.
