A litttle Bit of Heaven Oatmeal Cookie
- 6 oz dried cranberries
- 2 cup water
- 1 cup margarine, softened
- 1 cup light brown sugar
- 1/2 cup granulated sugar
- 1/2 tsp orange extract (plus 2 drops)
- 1 tsp baking soda
- 1 1/2 cup all-purpose flour
- 2 1/4 cup dry quick oats
- 1/4 tsp salt
- 2 large eggs
- 1 cup white chocolate chips
- In a medium bowl combine dried cranberries and water.
- Microwave on high for one and a half minutes.
- Let stand 10 min.
- Drain well and set aside.
- Preheat oven to 350F
- In a large bowl cream together margarine and sugars until nice and creamy.
- (U can also use butter)
- Add eggs and orange extract.
- Beat again.
- In a seperate bowl sift together flour,baking soda and salt.
- Stir flour mix into butter mix until incorporated.
- Add oats.
- Stir well.
- Fold in cranberries and white chocolate chips.
- Drop by heaping tbl 2" apart on a parchment lined cookie sheet.
- Bake 10-12 minutes or until desired doneness.
- Let stand 2 min.
- Then transfer to wire rack for cooling.
- Serve and enjoy.
