Chicken Salad on Cantaloupe Rings
- 2 12 cups cooked cubed chicken
- 1 cup sliced celery
- 1 cup green grape
- 2 tablespoons minced fresh parsley
- 12 cup mayonnaise
- 1 tablespoon lemon juice
- 1 tablespoon cider vinegar
- 1 12 teaspoons prepared mustard
- 12 teaspoon salt
- 12 teaspoon granulated sugar
- 18 teaspoon pepper
- 4 cantaloupe, rings
- toasted sliced almonds
- In a large bowl, combine chicken, celery, grapes and parsley.
- In another bowl or pyrex graduate, combine the mayonnaise, lemon juice, cider vinegar, mustard, salt, sugar and pepper.
- Pour over chicken mixture and toss well.
- Chill the salad for at least an hour.
- To serve, put 1 cup of chicken salad in cantaloupe ring and sprinkle with toasted almonds.
