AMIEs PASTA alle ZUCCHINI
- 2 clove garlic, thinly sliced
- 2 tbsps. olive oil
- 5 basil leaves
- 1 salt and freshly ground black pepper
- 1 tbsp finely chopped flat-leaf parsley
- 6 medium fresh zucchini, sliced lenghtways
- 1/2 cup grated parmesan
- 320 grams pasta lunga o spaghetti
- Heat the oil in a large, heavy based saucepan over medium heat.
- Add the garlic and cook until it becomes golden brown.
- Add the sliced zucchini and cook for 20-25 minutes.
- Gently warm, stirring occasionally, until becomes soft and tender.
- Stir in the basil and parsley.
- Season with salt and pepper.
- Add and mix well the parmesan.
- Meanwhile, bring a large pot of water to a boil.
- Add a tablesppon of salt and a splash of oil.
- Cook the pasta according to the packet directions, until al dente.
- Drain and return to the pan.
- Pour sauce (cooked zucchini) over the pasta and toss to combine.
- Serve scattered with parmesan.
- Serves hot!
