Aubergine Au Gratin Recipe
- 4 x aubergine
- 3 Tbsp. extra virgin olive oil
- 2 tsp garlic, crushed
- 1/2 c. onions, medium
- 1 Tbsp. tomato paste
- 4 x tomatoes
- 1/4 tsp salt, pepper
- 1 tsp basil, fresh
- 1 tsp sugar (caster)
- 1 tsp lemon juice
- 1 c. breadcrumbs, fresh
- 2 Tbsp. parmesan cheese
- Dice onions and tomatoes.
- Peel and cut the aubergine into 1-inch slices, then cut the aubergine slices into 8 wedges.
- Put the oil into a pan, saute/fry garlic and onion till soft.
- Add in the aubergine, and saute/fry 3 min, stir in tomato paste, tomato, sugar, lemon, pepper and basil.
- Simmer slowly till the vegetables are just tender (about 5 min).
- Every now and then stir carefully so which vegetable keeps its form.
- Pour into a buttered gratin dish, sprinkle top with breadcrumbs and parmesan cheese, dot with butter and cook in oven 190C/375F for 15 min till golden brown on top.
- Note:Aubergine will brown like an apple when cut so use quickly.
