Fried Rice
- 1 1/2 lb. chicken, deboned
- 3 c. brown rice
- 1 medium red pepper, finely chopped
- 1 medium onion, finely chopped
- 1 lemon
- 2 tsp. seasoned salt
- 1 packet onion soup mix
- 1 1/2 lb. medium shrimp
- 1 medium green pepper, finely chopped
- 4 heads scallions, finely chopped
- 1 tsp. garlic powder
- cooking oil
- Cook rice until it is crumbly, not sticking together.
- Clean and cut up chicken into bite-sized pieces.
- Clean and wash shrimp. Squeeze lemon juice onto shrimp and set aside.
- Season chicken with seasoned salt and garlic powder.
- In pan heat oil; add chicken.
- Cover and cook over low heat for 20 minutes.
- Drain juice off shrimp and add to chicken in pan. Cover and cook for another 10 minutes.
- Add chopped peppers, scallions, onions and onion soup mix into pan with chicken and shrimp.
- Let simmer for five minutes.
- Turn off heat.
- In large pan mix cooked ingredients thoroughly with cooked rice.
- Serves about seven people.
