Crockpot Swiss Cheese Meatloaf
- 1 pound Ground Beef
- 1 whole Egg
- 1/4 whole Onion, Chopped
- 1/4 cups Bread Crumbs
- 2 whole Slices Swiss Cheese
- 1/2 cups Ketchup, Divided
- Line crockpot with foil and spray with nonstick cooking spray or line with crock pot liners.
- In a mixing bowl, mix all ingredients except cheese, using only 1/4 cup ketchup.
- Combine well.
- If needed, you can add another 1/4 cup bread crumbs to achieve your desired consistency.
- Form meat into loaf and spread the remaining 1/4 cup ketchup on top.
- Place in crockpot.
- Cook on high for 45 hours or on low for 78 or until cooked through.
- Place cheese slices on during the last 1/2 hour of cooking, to melt the cheese.
- Remove meatloaf from crockpot.
- Let rest for 58 minutes before slicing.
