Crockpot Swiss Cheese Meatloaf

  1. Line crockpot with foil and spray with nonstick cooking spray or line with crock pot liners.
  2. In a mixing bowl, mix all ingredients except cheese, using only 1/4 cup ketchup.
  3. Combine well.
  4. If needed, you can add another 1/4 cup bread crumbs to achieve your desired consistency.
  5. Form meat into loaf and spread the remaining 1/4 cup ketchup on top.
  6. Place in crockpot.
  7. Cook on high for 45 hours or on low for 78 or until cooked through.
  8. Place cheese slices on during the last 1/2 hour of cooking, to melt the cheese.
  9. Remove meatloaf from crockpot.
  10. Let rest for 58 minutes before slicing.
