Missouri Green Beans Recipe
- 3 c. fresh green beans, stemmed & cut into 1" segments
- 2 slices bacon, cut into 1/2" pcs
- 1/4 c. diced mild white onion
- 1/4 c. water (approx.)
- Saute/fry bacon in heavy saucepan till it is transparent; don't brown it.
- Add in onion and heat till it is soft.
- Over low heat, add in beans and stir gently till they are bright green.
- Add in water to beans, cover tightly and simmer slowly for 30 to 40 min.
- If there are leftovers, marinate in "Good Seasons Italian Dressing" and add in to a lettuce or possibly spinach salad with sliced hard boiled Large eggs and crispy bacon.
