Sweet Potatoes With Pear

  1. Wash the sweet potatoes, cut out eyes and bake at 375 to 400 until soft.
  2. Place into a food processor and puree.
  3. Add 1 to 2 tbs.
  4. sweet butter per person.
  5. 1 to 2 tbs heavy cream.
  6. Salt and Maple syrup to taste.
  7. Add the un-peeled pear and puree.
  8. The pear is the "secret" that gives this dish complexity.
  9. To be "fancy" you can pipe the dish onto the plate.
  10. Add a bit of fresh orange juice for variation.
  11. You may also use yams instead of sweet potatoes.
