Peppers Stuffed With Sauerkraut Recipe
- 6 large green peppers
- 1 c. cracker crumbs
- 2 tbsp. finely minced onion
- 1/4 teaspoon chili pwdr
- 2 c. sauerkraut
- 1 tbsp. lemon juice
- 2 teaspoon salt
- Healthy pinch of pepper
- 1/2 c. canned tomatoes
- Grated cheese
- Cut thin slices from stem end of peppers, remove seeds and parboil in boiling salted water to cover 5 min.
- Mix remaining ingredients except cheese.
- Stuff peppers and top with grated cheese.
- Bake at 375 degrees for 25 to 30 min.
- (1/2 lb.
- grnd beef may be added if you like, brown meat and onion in frying pan, and add in to above).
- Serves 6.
