Home-Style Apple Bake
- 1 tablespoon butter or 1 tablespoon margarine, softened
- 2 teaspoons baking powder
- 14 teaspoon salt
- 2 eggs
- 1 cup sugar
- 2 medium baking apples, peeled and finely chopped (such as Rome Beauty or Granny Smith)
- 12 cup chopped pecans, toasted
- 2 tablespoons raisins
- 1 cup frozen whipped topping, thawed (optional)
- 1 cup apple, slices (optional)
- 1 cup all-purpose flour
- Generously grease a 9-inch pie plate with the 1 tablespoon butter or margarine; set aside.
- In a small bowl combine flour, baking powder, and salt.
- In a large mixing bowl beat eggs and orange extract, if using, by hand until foamy.
- Stir in sugar.
- Add flour mixture, stirring until well combined (mixture will be stiff).
- Stir in apples, pecans, and raisins.
- Spread evenly in greased pie plate.
- Bake in a 325 degree F oven about 50 minutes or until golden brown and center appears set.
- Serve warm.
- To serve, cut into wedges and top with whipped topping and apple slices, if desired.
- Makes 6 to 8 servings.
