Turkey Pot Pie
- 2 box refrigerated pie crust
- 1/3 cup butter
- 1/3 cup chopped onion
- 1/3 cup all purpose flour
- 1/2 tsp salt
- 1/4 tsp pepper
- 14 oz chicken broth
- 1/2 cup milk
- 2 1/2 cup cooked shredded turkey
- 2 cup frozen mixed vegetables
- Heat oven to 375.
- Sprinkle flour on a countertop and roll out the dough an extra inch.
- Using a biscuit round, cut out dough to cover the tops of your ramekins.
- In a 2 quart saucepan, melt butter over medium heat.
- Add onions and cook 2 mins, stirring often, until tender.
- Stir in flour, salt and pepper until blended.
- Stir in broth and milk, cooking and stirring until bubbly and thickened.
- Stir in turkey and mixed vegetables.
- Remove from heat.
- Spoon into ramekins.
- cover with crust and crimp over the edge.
- Cut slits in several places.
- Brush tops with egg wash.
- Place ramekins on a baking sheet.
- Bake for 35 mins.
- Remove and serve.
