Picada
- 2 Tablespoons Almonds, Blanched
- 2 Tablespoons Olive Oil
- 1 slice Country-Style White Bread
- 3 cloves Garlic, Chopped
- 1 pinch Salt
- Toast the almonds on a baking sheet at 350 F until light golden and fragrant (about 5 minutes).
- Meanwhile, in a small fry pan, heat the olive oil over medium heat.
- Fry the bread until golden, turning once (about 3 minutes).
- Allow bread to cool.
- Combine the almonds, bread, garlic and salt in a food processor.
- Process to crumbs.
- Tips:
- To make a Mint Picada (gorgeous on a cold lamb sandwich), omit the garlic and add 1/4 cup fresh mint leaves.
- You could do the same with dill (for fish), basil (for tomatoes), etc.
