Picada

  1. Toast the almonds on a baking sheet at 350 F until light golden and fragrant (about 5 minutes).
  2. Meanwhile, in a small fry pan, heat the olive oil over medium heat.
  3. Fry the bread until golden, turning once (about 3 minutes).
  4. Allow bread to cool.
  5. Combine the almonds, bread, garlic and salt in a food processor.
  6. Process to crumbs.
  7. Tips:
  8. To make a Mint Picada (gorgeous on a cold lamb sandwich), omit the garlic and add 1/4 cup fresh mint leaves.
  9. You could do the same with dill (for fish), basil (for tomatoes), etc.
