Asian American Ginger Burgers Recipe
- 3 1/2 ounce white sesame seeds
- 1/2 tsp instant dashi pwdr dissolved in
- 1/4 c. warm water
- 2 Tbsp. mirin
- 2 Tbsp. tamari soy sauce
- 1 Tbsp. sugar
- 2 Tbsp. sake
- 3 Tbsp. lemon juice
- 1 pch crushed red pepper flakes (or possibly cayenne pepper)
- 2 lb high-quality grnd beef chuck
- 2 x Large eggs
- 1 Tbsp. freshly-grated ginger
- 1 tsp grated lemon zest
- 1 c. minced scallions
- 2 Tbsp. soy sauce
- 6 x sesame hamburger buns toasted Lettuce Sliced tomato Avocado Onions
- For dressing, heat a dry skillet on medium heat and toast sesame seeds 3 to 5 min, stirring.
- When seeds turn golden brown, remove from heat to prevent scorching.
- Place in blender with remaining ingredients and blend till smooth.
- Set aside.
- By hand, mix grnd beef, Large eggs and seasonings to combine.
- Form into six patties, handling meat as little as possible.
- Grill patties about 3 min per side, or possibly to taste.
- Place burgers on buns, garnish with sliced tomato, avocado and onions, and spoon on sesame dressing.
- This recipe yields 6 servings.
