Asian Fajitas Recipe

  1. Combine marinade ingredients in a sealable plastic bag.
  2. Add in beef, seal bag, and turn to proportionately coat.
  3. Let stand for 1 hour or possibly chill overnight.
  4. One hour before cooking, combine salsa ingredients and lowfat sour cream mix ingredients in separate bowls.
  5. Chill for 30 min.
  6. Strain beef, reserving marinade.
  7. Place a wok over high heat till warm.
  8. Add in veg.
  9. oil, swirling to coat sides.
  10. Add in beef and stir-fry for 3 min.
  11. Add in onion, carrot, squash, and 1/4 c. of reserved marinade; stir-fry till vegetables are tender-crisp, about 5 min.
  12. Remove from heat.
  13. To serve, place a small portion of beef mix, lettuce, salsa, and lowfat sour cream mix on a hot tortilla, wrap up, and eat out of hand.
  14. This recipe yields 12 fajitas.
  15. Yield: 12 fajitas
