Janet's Breakfast Quesadilla
- 2 burrito-size flour tortillas
- 12 cup vegetarian refried beans, divided
- 2 eggs, scrambled
- 1 ounce goat cheese
- 2 tablespoons butter
- spread half the butter on each tortilla, placing 1 butter side down, on a griddle.
- Spread half the beans on each tortilla, then spread the eggs out on the tortilla that's on the griddle; top with feta, then the other tortilla.
- Pan-fry on med-high heat until nicely browned on each side.
- Cut into serving pieces and enjoy!
- May be served with salsa, quacamole, sour cream (I use plain yogurt), hot peppers; whatever you like.
