Midwest Fried Green Tomatoes
- 3 -4 green tomatoes
- 2 -3 eggs (I like the big.brown ones fresh out of the nest)
- 14 cup milk
- salt and pepper
- 1 pinch nutmeg (fresh grated is best)
- lard (I use vegetable oil now to please my doctor.) or bacon fat (I use vegetable oil now to please my doctor.)
- Slice tomatoes about 1/2" thick.
- Beat eggs and milk together.
- Mix flour, salt, pepper and nutmeg together.
- Dip tomatoe slices in egg mixture (shake excess back into bowl so the mixture won't drip in flour mixture), then dip in flour mixture.
- Lay on plate, then double dip each slice when you have dipped all the slices for the first time.
- Let the slices sit for a minute or two until oil is hot.
- Fry a single layer in grease until browned on one side, then turn over and brown on that side.
- Drain on paper towels to remove excess oil.
